For a light(ish) dessert after Sunday’s steak and potatoes dinner, I served my favorite-cheese-of-the-month, a creamy Cambozola, with Ficoco – a sweet and tangy fig and cocoa spread, and macerated strawberries. Cambozola is a wonderfully rich German cow’s milk cheese that blends a French-style triple creme with an Italian-flavored gorgonzola, for a decadently smooth cheese with just a hint of bite from the blue. The tartness of early season strawberries was a great balance to the rich cheese and Ficoco.
My only regret was not picking up an appropriate dessert wine to go with it!
