The livarot well ripened has an elevated swank
Paraded with its Normandy cousins it compares
to a camembert, but more pungent

@ houndstooth – Wow, that sounds awesome. Unfortunately my husband hates both blue cheese and tuna, so I doubt it would go over well at home.

Ode to Roquefort

Wheel of sheepmilk blue
Crumbly and acidic
Sweet salt
& smoky mild,

Cave-aged
Cheese of kings!
Pliny the Elder!
Loud and nose-sharp,

Transformed by love
& Legend
My Roquefort,
My one and only mould.

Ode to Roquefort:

O’ Roquefort, how I loathe thee for thy haunting beauty.

Thy taste maketh every ounce of my bod yearn for thy colored specs to be near.

Thou art salty, yet my pallet doeth not long to be cleansed from thy intense yet delicately lingering taste.

O’ Roquefort, thy pungent odor intoxicates both mind and nostrils.

Much like thy coloring, fleeting traces of your crumbles leave my heart blue.

Why must thy leave?

Tis not just.
