Thanks for comments, everyone! It is a unique cheese, that's for sure. Tenaya, the Shropshire Blue is that color because it's tinted with annatto, a natural food coloring that is also used to make cheddar orange.

That photograph is exquisite. I can't wait to get my hands on a slab of Shropshire Blue! What makes it yellow -- do you have any idea?

Similar experience tasting Shropshire Blue - had it as part of a cheese board at Daniel Boulud's restaurant at the Wynn Las Vegas in January. It was a stand-out among the selections, which were excellent, and a beautiful compliment to our Cabernet Sauvignon. Since I'd never had it before, and liked it so much, I flagged down our waiter to inquire about what it was. I've purchased it since ... there's nothing else quite like it. It's so good!

Wow that is unlike any cheese I have ever seen before. I don't think the French have an equivalent. I am going to have to try to track it down. Your site is great! I am a cheese fiend myself so do appreciate all the tasty information.
