It will come as a surprise to exactly no one that there was plenty of Wisconsin cheese at the Summer Fancy Food Show last week. How much, you ask? The Wisconsin Milk Marketing Board’s booth was about as large as the entire first floor of my house. (Granted, I don’t have a large house, but you catch my drift.) Learn about the newest Wisconsin dairy offerings over at Heavy Table today, where I write up the rainbow of Wisconsin blue, yellow and – amazingly – pink cheeses. We enjoyed the chance to chat with the charming Marieke Penterman (left), the Wisconsin-via-the-Netherlands gouda wunderkind who introduced a semi-soft cheese at the show that had me and Colleen sneaking extra tastes on the sly.
We also learned that Emmi Roth USA, the company behind notable cheeses such as Grand Cru Gruyere, now will be marketing its Wisconsin- and Swiss-made under different brands. The Emmi name will remain on the Swiss cheeses, while those crafted at the Monroe, Wis., facility will be known to the world as Roth cheeses. That’s cool with us – as long as the cheese remains delicious!
