Today we turn to the ACS blue ribbon winning blues, with a taste of Willapa Hills‘ Big Boy Blue. Another winner in the farmstead category, Willapa Hills was founded in 2005 on the banks of the Chehalis River in southwest Washington. Through the aid of Whole Foods Local Producer Loan and Slow Money NW they have expanded in recent years to increase production and broaden distribution of their fabulous sheeps and cows milk cheeses. (Their Two-Faced Blue, which I’ve had the pleasure of sampling in the past, is a mixed milk blue.)
Big Boy Blue is, as you might infer from its name, a big bold blue. With a mottled grey natural rind it is earthy and a little funky, but still a little sweet and quite creamy to temper the blue cheese tang.
