{Curd Cupid} A Romantic Cheese Pairing

When you want to impress, on Valentine’s Day or any other day, there’s no greater pairing than the simple yet sultry match of a luscious, creamy bloomy-rind and bubbly. But stay away from the supermarket “Brie” and sparkling rosé and try this all-American pairing to start (or end) your evening: Moses Sleeper (Jasper Hill Farm, VT) and Pretty in Pink from Lost Rhino Brewing Co. (VA). Yes, that’s pink beer. It’s Valentine’s Day, after all. And unlike those so-sweet-your-teeth-ache red baked goods, Pretty in Pink is naturally hued with the addition of pomegranate. (Bonus: It’s a collaboration beer by the four lady brewers of Lost Rhino, Vintage 50, Hardywook Park and Bluejacket, and a portion of Pretty in Pink sales go to fund breast cancer research.)

Your local cheesemonger may have special heart-shaped cheeses in stock for the holiday, but they tend to be goat cheese. Not that there’s anything wrong with that, but if it’s a first date or new romance and you’re not sure how your sweetheart feels about the barnyardy side of the curd spectrum, a pure cows-milk cheese like Moses Sleeper may be a safe, yet satiating, bet. You can make your own heart-shaped wedge by trimming a quarter wheel as shown above.
