    Things you overhear at CheeseCon: “Would you know where I could find camel rennet?”

    Things you find yourself discussing at CheeseCon cocktail parties: bovine epidurals with a @CellarsatJH farmer.

    “We’re so concerned about the bad bugs but no one’s interested in the good bugs,” Jeremy Little of @SweetGrassDairy on flora.

    “We’re in a place where we have microbial mono-cropping,” Pav Cherny, Lake Mendocino Creamery, explaining similarity of flavors in pasteurized cheeses.
