Willi, a Wisconsin Collaboration

This limited production Alpine-style cheese was a collaboration between four Wisconsin cheesemakers, Bob Wills (Cedar Grove Cheese Inc.), Willi Lehner (Bleu Mont Dairy), Bill Anderson (Crème de la Coulee Artisan Cheese) and Chris Roelli (Roelli Cheese Co. Inc.). As you can see, it garnered a ribbon at the American Cheese Society awards in 2013, at which ceremony cheesemaker Willi Lehner, for whom the cheese is named, tied himself for two third place, Best in Shows, with his Bandaged Cheddar and Big Sky Grana.

Cedar Grove adds:

“[This] cheese was first produced for a demonstration of characteristics of grass based cheese at Clock Shadow Creamery, our Milwaukee operation. We love working with other cheese makers. And Willi Lehner is our fave.”

We love Willi, too — we were lucky enough to visit his aging caves in Blue Mounds, Wisconsin, several years ago, and always make sure to visit him at the Dane County Farmers Market when in Madison. You should, too!
