It’s October, the most wonderful time of the year. Yes, American Cheese Month is here, and we’re not just excited about this because it coincides with Jill’s birthday month, but also because, this year, it serves as the prelude to our five-year blogiversary.

So we’re counting down with 31 essential American cheeses — drawn from over 400 posts we’ve written over the years. We hope you’ll journey down memory lane with us, perhaps discovering a new-to-you cheese or two along the way. Pull up a chair, pour yourself a glass of bubbly and join our virtual cheese social on facebook, instagram, twitter &/or pinterest.

First up, the very first cheese we wrote about on Cheese and Champagne: Bayley Hazen from Cellars at Jasper Hill, Vermont.

About Bayley Hazen, we wrote:

Bayley Hazen is a creamy, tangy, raw-milk blue that strikes just the right balance of salty bite and grassy sweetness.
